Avocado Coconut Shake

Between G and me, this thick shake is known as a smoothie. We'll have this any time of the day, and what I especially love about it is that we can elaborate on the toppings to suit our hangry levels.

Serves 2


  • 200 milliliters coconut milk
  • 20 milliliters MCT oil - optional
  • 1/2 teaspoon vanilla essence
  • 1 avocado
  • 10 ice cubes


  1. 1. Add the coconut milk, MCT oil (if using), and vanilla essence to a blender.
  2. 2. Then scoop out the avocado flesh, add it to the blender, and blend everything until smooth.
  3. 3. Finally, add the ice cubes and blend until smooth again.
  4. 4. Divide over two bowls or glasses and top with anything you want. I like coconut flakes or chopped nuts or some strawberries (or all three).


The recipe stands or falls with the type of avocados and coconut milk you use. Get organic, ripe avocados, and use Aroy-D or Chaokoh coconut milk. If you can't find either of these coconut milk brands, you probably shouldn't try to make this recipe; it's that important. I'll sometimes add a thumb of ginger at step 2. Or a quarter of a banana and a tablespoon of peanut butter.
