Pork Omelette

Ingredients

  • 3 tablespoons lard or bacon grease
  • 1 garlic clove - minced
  • 1 shallot - sliced
  • 1/4 onion - sliced
  • 1/4 cup green onions - sliced
  • 500 grams ground pork
  • 1 tablespoon gluten-free oyster sauce
  • 1/2 tablespoon fish sauce
  • 4 eggs

Directions

  1. 1. In a medium pan, heat three tablespoons of bacon grease (or avocado oil) for three minutes over medium heat
  2. 2. Add in minced garlic and sauté for one minute
  3. 3. After garlic is sautéed, add in pork and sauté until no longer pink
  4. 4. Add one teaspoon of oyster sauce and a pinch of salt and pepper and stir for one minute
  5. 5. Add shallot and onion and sauté until they become transparent
  6. 6. In a separate bowl, scramble four medium eggs, green onions, and fish sauce and whisk all together
  7. 7. Add egg mix into the pan
  8. 8. Swirl egg mix around the pan until no runny eggs
  9. 9. Flip over to cook the other side for one minute

Notes

If you only have onions, that's fine too.
