Lao Egg Soup

Ingredients

  • 3 eggs
  • 1 tablespoon fish sauce
  • 2 cups chicken stock
  • 1/3 cup green onions
  • 1/3 cup shallots
  • 2 garlic cloves
  • 3 Thai chillies - optional

Directions

  1. 1. Thinly slice garlic, shallots, white onion, green onions, and Thai chilies
  2. 2. Beat eggs into a bowl along with garlic, shallots, white onions, green onions, Thai chilies, and fish sauce
  3. 3. Add the stock to a pot and bring to a boil
  4. 4. Once the stock is boiling, add in the egg mixture
  5. 5. Let the egg mixture boil for three minutes
  6. 6. Give the soup one light stir to slightly break up the egg
