Chocolate Banana Bread

This recipe was inspired by Green Kitchen Stories If I have to choose a favorite cake, it would have to be banana bread. I like every version I have tried so far, but this recipe is easy to adjust to whatever I have in the pantry. My banana bread never comes out the same. Let's say that I'm not that good at following recipes eheh.


Ingredients

  • 2 eggs
  • 70 grams coconut sugar
  • 70 milliliters coconut oil
  • 4 ripe bananas - 3 mashed, 1 for decoration
  • 100 grams hazelnut flour
  • 3 tablespoons raw cacao powder
  • 120 grams buckwheat flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 50 grams dark chocolate
  • 50 grams walnuts - crushed

Directions

  1. 1. Preheat the oven to 180°C degrees.
  2. 2. In a big bowl, crack the eggs, add the sugar, three mashed bananas, and the oil, and mix until well-combined.
  3. 3. Now add the flour and the rest of the dry ingredients and mix again.
  4. 4. Pour the batter into a baking tin.
  5. 5. Cut the last banana in half, arrange the two halves on top of the batter and brush the bananas with coconut oil.
  6. 6. Bake for 45 minutes. Then remove the bread from the oven and let it cool completely.

Notes

I like my banana bread with a hot cappuccino, but I also like it topped with peanut butter and fresh berries and a filter coffee on the side.
