Creamy Coconut Chia Pudding

Serves 2


  • 1 cup coconut milk
  • 2 tablespoons coconut yogurt
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla essence


  1. 1. In a bowl, whisk all the ingredients together. Then divide the mixture over two glasses, and refrigerate overnight (If making on the same day, one to two hours in the fridge will do too).


You can replace the vanilla essence with 1/8 teaspoon of vanilla powder. I like the coconut yogurt brands Coyo and Raglan, but you can use any brand you want and even replace the coconut yogurt with a couple of tablespoons of Greek yogurt. For the coconut milk, make sure to use either Aroy-D or Chaokoh (this is essential!).
