Summer Friselle

Friselle is a typical bread from Puglia. Although it's too hard to eat as it comes, just by dipping it in water, it'll become soft and ready to be garnished with anything you like. I opted for summer veggies and tofu, but I also love them with burrata, anchovies, and olive oil.

Serves 1


  • 2 pieces friselle
  • tomatoes
  • bell peppers
  • 150 grams smoked tofu - diced
  • 30 grams olives
  • 3 tablespoons olive oil
  • fresh basil
  • fresh oregano
  • sea salt
  • freshly ground pepper


  1. 1. Dip the friselle in a bowl of water for a few seconds and then place them on a plate.
  2. 2. Cut the veggies and olives and dice the tofu. Then just arrange it on top of the bread.
  3. 3. Garnish with fresh oregano, basil, and plenty of salt and pepper.
