Pumpkin Spice Bread

Autumn calls for everything pumpkin, so why not kick off the season with one of my favorite cakes? It's very simple to make and your home will smell like fall instantly.

Makes 1

  • 150 grams 0 type flour
  • 50 grams buckwheat flour
  • 100 grams spelt flour
  • 100 grams brown sugar
  • 8 grams baking powder
  • 300 grams pumpkin - steamed
  • 2 eggs
  • 50 grams butter - melted
  • 200 milliliters soy milk
  • lots of cinnamon
  • handful pumkin seeds

  1. 1. Cook a whole pumpkin in the oven for about an hour or until it's soft, and then let it cool a bit.
  2. 2. Blend the eggs, sugar, melted butter, and 300 grams of pumpkin in a food processor until you get a thick cream.
  3. 3. Add the milk and the cinnamon, and mix it in well.
  4. 4. Add the three types of flour and the baking powder with a pinch of salt. Then mix again until well-combined.
  5. 5. Transfer the batter to a loaf pan. Sprinkle with pumpkin seeds and bake for 50 minutes at 180°C degrees.

I used three types of flour, but you can also only use just the 0 type. If you like your cakes on the sweeter side, you can add 150 grams of sugar instead of 100; I like mine not too sweet.
